Recipe: Lemon Apricot Bars!

Enjoy this special recipe for lemon apricot bars to make during quarantine!
**Disclaimer: you can make them with or without apricots!
Ingredients:
- 1 cup butter
- 1/2 (x2) coconut sugar (regular is fine too)
- 2 (x2) cups flour
- 4 eggs
- 2 lemons
- 2 apricots (optional)
- 1/4 cup powdered sugar (optional)
Steps:
- Preheat oven to 350 degrees
- In a bowl, blend the butter, flour, and coconut sugar together. When blended, press into the bottom of an ungreased pan
- Bake for 20 minutes (more if you want on the crisper side)
- In a bowl, mix the second serving of flour and sugar with two eggs and lemon juice. Mix until it reaches the texture of a preserve, then add in chopped, or thin, slices of apricots.
- TIP: warm apricot slices are easier to cut, so you might want to put them on a pan and heat, or even put them in the microwave
- Poor the lemon apricot mixture over the now baked crust and bake for an additional 15-20 minutes in the preheated oven.
- Wait for the pan to cool down and spread the powdered sugar over the lemon bars, then cut them into squares.
