Recipe: Lemon Apricot Bars!

Enjoy this special recipe for lemon apricot bars to make during quarantine!

**Disclaimer: you can make them with or without apricots!


  • 1 cup butter 
  • 1/2 (x2) coconut sugar (regular is fine too) 
  • 2 (x2) cups flour
  • 4 eggs
  • 2 lemons 
  • 2 apricots (optional)
  • 1/4 cup powdered sugar (optional)


  1. Preheat oven to 350 degrees
  2. In a bowl, blend the butter, flour, and coconut sugar together. When blended, press into the bottom of an ungreased pan
  3. Bake for 20 minutes (more if you want on the crisper side)
  4. In a bowl, mix the second serving of flour and sugar with two eggs and lemon juice. Mix until it reaches the texture of a preserve, then add in chopped, or thin, slices of apricots.
    1. TIP: warm apricot slices are easier to cut, so you might want to put them on a pan and heat, or even put them in the microwave
  5. Poor the lemon apricot mixture over the now baked crust and bake for an additional 15-20 minutes in the preheated oven. 
  6. Wait for the pan to cool down and spread the powdered sugar over the lemon bars, then cut them into squares.
